My blood labs did show that I am anemic, something I've struggled with for my entire life. So, its back on iron supplements - this time gluten free. Hopefully this will help with my energy levels. The rest of my bloodworm put me on the low end of normal.
I should get my results in the next few days. I'm resigned to the fact that Celiac will become my "new normal" - I hate that expression by the way, but it seems apt in this case.
My GI doc told me to begin a gluten free diet and start jotting down questions about following this new eating plan. So far, (3 days in) I'm doing okay. I'd give myself a solid B+. I haven't intentionally eaten any gluten, but I'm having a hard time with getting up the courage to ask about products containing gluten. I ordered a mocha the other day at Whole Foods and asked about weather or not the almond milk contained gluten, but forgot to ask about the mocha part of it. I beat myself up for that for about 15 min, and then enjoyed the delicious drink and made a note to definitely ask next time.
I am seeing that the hardest part of this process is not what I put in my own body, but preparing foods and treats for my family. I make my husband chocolate chip cookies every night. Now before you vote me off of the island, I'll explain. I make a log of cookie dough, freeze it, and slice off a few cookies each night while my husband bathes the kids and puts them to bed. It feels like a fair trade to me. I get a few moments of precious peace and quiet in the kitchen and he gets quality time with the girls and a few delicious cookies.
I realized that I do not have the will power to make him his cookies without tasting here and there, and so, I wanted to try gluten free cookies to see how they worked out.So last night, armed with a bag of gluten free flour, I made him a batch of gluten free chocolate chip cookies. I'm pleased to say that they were a HUGE success. I modified the recipe slightly from the package, but here is the recipe:
Gluten Free Chocolate Chip Cookies - almost like Grandma's
2 sticks of room temp. unsalted butter
3/4 cup sugar
3/4 cup brown sugar (I use sucanat)
2 eggs
1 tsp. vanilla
1 tsp. water
2 1/4 cup Pamela's GF Artisan Flour Blend
3/4 tsp baking soda
1tsp salt
1 12oz. package of chocolate chips (gf of course- I like the enjoy life band)
Cream the butter and sugar until smooth and fluffy (a little longer than you thin you need to). Add the eggs one at a time beating in-between additions. Add in the vanilla and beat to incorporate. Add the water.
In a separate container (I use a pyrex measuring cup to make pouring easier) combine the flour, baking soda and salt and whisk to combine and aerate.
Add the dry ingredients to the wet until uniform. Add the chips.
If baking right away - Bake in a preheated oven at 350 for 14 min
Otherwise, place batter on a piece of parchment paper and roll into a log and freeze. Try to place it as flat as possible in the freezer to make future cutting easier. When ready, slice off a few cookies and bake as directed above.
